I can’t think of much better way to kick off this blog than with post on breakfast, it is the most important meal of the day after all. Tim Ferriss recommends getting 30 grams of protein within 30 minutes of waking up due to the effect on the body’s metabolism. As I mentioned in the About page I’m not big on counting nutrients but this recipe comes very close to this 30 gram guideline. It is also a very easy and cheap way to increase your veggie intake as well as tasting great.
One note of caution: be very careful to check the sodium content of the salsa that you use. I recommend finding a salsa at or below 3% of daily value for sodium per serving because I typically use several servings at a time. My current favorite is Trader Joe’s Fire-Roasted Tomato Salsa which comes in at 30mg or 1% of DV. Tim is also a big proponent of cooking with Macademia Oil which I highly recommend for this recipe (I like Now Foods Macadamia Oil from Amazon). Finally, I’m not much of a perfectionist early in the morning but if you want help on scrambled egg cooking techniques here is one many videos on Youtube to assist you in making killer scrambled eggs.

Serves 1
Add frozen spinach and mixed vegetables to a frying pan and cook at medium heat. Meanwhile mix 4 eggs with a pinch of salt and black pepper in a small bowl. When the veggies and spinach are thawed out transfer them to a small container. Add a teaspoon of macadamia oil (or other cooking oil) to pan and coat evenly. Add a cup of the veggie mix to the pan followed by the eggs. Refrigerate remaining veggie mix for use later. Continue cooking mixture with intermittent scrambling until eggs are almost completely solidified but not over done. Add salsa and enjoy immediately.
